Ingredients
1 cup almond butter
1 ½ cups grated or chopped zucchini (I shred it in my food processor and then chop it up into small pieces)
¼ cup raw honey (I sometimes only use 2 TBSP because I don’t like things really sweet)
1 egg
1 tsp. Vanilla
1 tsp. Baking soda
1 tsp. Cinnamon
½ tsp. Nutmeg
1 cup dark chocolate chips (I use the Enjoy Life brand as they are gluten, dairy, and soy free)
Directions
Preheat oven to 350 degrees. Combine all ingredients into a large bowl and mix everything together.
Pour into a greased 9×9 baking pan. Bake for 35-45 minutes, or until a toothpick comes out clean.
