Here’s a recipe to use for the new Taco Tuesday. Or whenever the carving strikes.
Tacos
- Corn Tortillas
Sharp Cheddar Cheese
Olive Oil
1 lb Ground Turkey, Chicken or Beef
½ Onion, chopped
2 Garlic Cloves, minced
1 t Salt
1 t Chili Powder
1 t Ground Cumin
1 Onion, sliced
2 Red/Green Peppers, sliced
12 oz Mushrooms, sliced
Guacamole
Simple Crunchy Slaw (see recipe below)
- Drizzle pan with olive oil and sauté the ground meat with half of the minced garlic and chopped onion. Season with salt, chili powder and ground cumin.
- Drizzle sauté pan with olive oil add onions and peppers, season with salt and pepper, and cook until tender. Remove from pan and sauté mushrooms with salt and pepper.
- Add any more of your favorite veggies, you can’t go wrong.
Simple Crunchy Slaw:
- 2 C Green and Red Cabbage, shredded
1-2 Carrots, shredded
1 Celery Stalk, sliced
- Toss with 2 T apple cider vinegar, 1 T olive oil, ¼ t salt and 2 t honey.
Start with corn tortillas then layer on with guacamole, cheese, meat, veggies and top with slaw.
