Detox Salad

Ingredients
3 large beets, peeled and shredded (about 2-3 cups)
½ head green cabbage, finely chopped (about 2 cups)
1 bunch dinosaur kale, de-stemmed and shredded (about 2 cups)
½ cup fresh cilantro, finely chopped
Zest of 1 lemon (about 1 TBSP)
Salad Dressing
2 lemons juiced (about 4 TBSP)
½ cup sunflower butter (no sugar added)
1 TBSP fresh ginger, grated
4 TBSP Raw unfiltered apple cider vinegar
Directions
For the salad, combine all ingredients in a large mixing bowl.
For the salad dressing, combine all ingredients in a food processor or blender and blend for 1-2 minutes, or until smooth and creamy.
Combine the salad ingredients with the dressing and top off with fresh lemon zest.
